On Friday, the Dragons announced the Berkeley junior's signing on a two-year deal as new head coach Anthony Griffin continues to shape his squad for the 2021 season.
Bird joins emerging forward Poasa Faamausili, who departed the Roosters to sign with the Dragons last month.
Bird, who was released by the Broncos on Friday, played 17 games in three seasons at Red Hill. He missed all of their 2020 campaign due to an ACL injury.
However, the 25-year-old utility arrives with an impressive resume to his name. He has represented NSW in five State of Origin games and also lined up at centre in Cronulla's premiership-winning side in 2016.
Bird's journey to the Sharks began at the Dragons, where he progressed through the club's lower grades before departing in 2015.
St George Illawarra's general manager of football Ben Haran said he was excited to see Bird back at the club.
"It's great to see Jack return to the Dragons with him being a local junior as well as his capabilities as a player," he said.
"We wanted to ensure that Jack returning to the Dragons was right for us as a club, which is why we exercised due diligence around his well-documented injury troubles.
"Jack's a real competitor with a winning attitude and is a player who attacks the game each and every time he plays. We're looking forward to seeing him bring that to the Dragons upon his return."
The Bird and Faamausili signings come on the back of St George Illawarra retaining a host of talent for next season, including Mat and Max Feagai, Adam Clune, Josh Kerr, Jackson Ford and Mikaele Ravalawa.
