Nichole Michelle Hawkins, 32, appeared in Wollongong Local Court where she refused to accept the services of Legal Aid.
She told the court she did not want to apply for bail because she did not have any place to live.
Reports suggest that about 7am on Friday the woman approached the 22-year-old, who was fishing and verbally abused him.
The woman allegedly armed herself with a fishing knife and stabbed the man in the leg before throwing his belongings, including the knife, into the water.
Witnesses came to his aid before Lake Illawarra police officers attended and established a crime scene.
The man was taken to Wollongong Hospital for treatment for a stab wound to his left thigh.
His injuries are not considered life threatening.
The woman was arrested at the scene and taken to Lake Illawarra Police Station.
She was charged with wound with intent to cause grievous bodily harm.
It's believed the man and woman aren't known to each other.
