Lake Illawarra Police inspector Aaron Wunderlich said police responded to a hold-up alarm at the Terry St eatery 8.10am Monday.
Polie have been told the man wore a mask and "referred to having a firearm in his waistband" as he demanded cash, before fleeing on foot towards Russell Street.
Police say the employee complied and was not physically harmed.
"She's obviously very shaken," Insp Wunderlich said.
"Police responded very quickly to this incident and spoke to her. We provided her support ... she's doing as well as can be expected."
Police are now reviewing CCTV footage as part of their investigation.
The man is described as being of Caucasian appearance, with ginger hair, aged in his early 20s.
He was wearing black pants, a dark blue hooded jumper and a blue mask.
