The 37-year-old pilot, from Sydney, launched off Bald Hill about 7pm Monday, only to crash into the cliff face soon afterwards.
An off-duty police officer and off-duty paramedic were first to come to his aid, finding him about 50 metres down the embankment.
Police Rescue and a Toll ambulance helicopter were then involved in a three-hour operation to retrieve him.
He was assessed by doctors on the scene then airlifted to St George Hospital in a serious but stable condition.
Police inquiries into the circumstances surrounding the crash are continuing.
