The UFC announced on Sunday night (AEDT) that the Illawarra product will fight Brian Ortega in a world featherweight championship bout at UFC 260 on March 27, 2021.
The location is still to be announced.
Ortega has a 15-1 UFC record, with his latest victory coming against Chan Sung Jung in October 2020.
It will be Volkanovski's first fight since he defended his title with a split-decision win over Max Holloway last July. Afterwards, the 32-year-old said "I'm the best featherweight in the world right now, but I want to be GOAT".
"You need title defences to do that, you need No. 1 contenders to do that. That top five they're about to fight each other and I've got my eye on every single one of them," he said.
"All of them are in the same boat, one big win and everyone's screaming their name and I'll say 'let's do it'. Whoever's looks the best, whoever's the toughest fight for me, bring it on.
"I feel I can do a lot better with a full camp later this year, and I'm going to keep proving I'm the best featherweight of all time."
