Police allege her partner was overheard saying, "now look what you did - you stabbed me".
Emma Stinson, 28, has been charged with wounding a person intending to cause grievous bodily harm, and contravening a restriction in an apprehended violence order.
Stinson and the alleged victim have been in a relationship for three years.
Police documents tendered to court allege there was "an extensive domestic violence history" between the pair, which resulted in multiple AVOs served on both of them.
Despite this, police claim the man is currently living at Stinson's Warrawong home, allegedly violating court orders.
On Friday, the couple had reportedly been arguing for the majority of the day before Stinson allegedly picked up a glass bottle and threw it towards the wall.
The bottle smashed and shattered over the lounge room floor.
The argument continued into the front yard after Stinson allegedly walked to the front door and threw a saucepan at her partner.
The argument continued, and the couple allegedly got into a physical altercation.
Stinson allegedly produced a large knife about ten inches in length with a silver blade, and stabbed the man in the left leg.
He was reportedly heard saying words similar to, "now look what you did - you stabbed me" and repeatedly said, "you stabbed me".
The man then dragged himself along the ground and into the house.
Police allege Stinson later placed the knife in the garbage wheelie bin in the front yard.
Neighbours contacted police, who found a blood trail leading from the front carport, along the path to the front door, through the lounge room leading up the staircase to the upstairs bedrooms.
Police said the man was laying at the top of the stairwell, with a blood-soaked towel wrapped around the top of his leg to try and stop the bleeding.
The man claimed he fell on some glass and denied the alleged stabbing.
However, police allege the wound was inconsistent with a cut from glass.
Paramedics arrived on-scene, and the man was taken to Wollongong Hospital for further treatment.
Stinson was arrested, and taken to Lake Illawarra Police Station.
A forensic examination was conducted, with the knife located in the bin.
In bail court on Saturday, lawyer Claire Carpenter said Stinson suffered from mental health issues, having been diagnosed with anxiety and depression. Stinson was bail refused to return to court on Monday.
