Free Selectors Dairy Stud currently breeds Nigerian dwarf goats as companion animals and for milk.
A development application before Kiama Council, and notifications distributed to nearby residents, states the owners of the stud want to setup a commercial kitchen for "cheese-making from goats's milk".
"Cheese produced from their milk has a very smooth and silky texture making the Nigerian Dwarf a very popular dairy goat for artisan cheese makers," according to the Dairy Goat Society of Australia.
The Mercury understands the owners of Free Selectors stud will focus on sustainability and animal health, and use methods learned in Latvia.
The hills around Kiama, Berry and Foxground have been renowned for dairy farming industry, predominantly with cows.
In recent years microdairies - such as The Pines, Pecora and Cupits - have sprung up in the region, producing specialty milk and cheese products.
