This year's luncheon had already been postponed, in the hopes that restrictions would ease enough to allow the usual large gathering.
Organisers applied for the exemption when they announced Austalian of the Year Grace Tame would speak at the event.
Vicki Tiegs said she wanted to give as many people as possible the opportunity to hear Ms Tame's story.
When the NSW Government approved the exemption last week the event went from 768 people to 920.
Held in 2006, the first International Women's Day Illawarra Committee hosted 120 people at a dinner event. In 2019 they hosted 850 people.
They have raised over $420,000 for local organisations that support women, and award annual scholarships for a range of women who are kicking big goals.
