Petero Baleinapuka, 57, entered his plea in the Wollongong Local Court via video link on Wednesday.
Baleinapuka was arrested in the early hours of New Year's Day last year after police attempted to stop his vehicle for a random breath test in Nicholson Street, Woonona.
He allegedly drove off, but hit a guard rail.
After police spoke to Baleinapuka, other officers went to a Campbell Street unit where they found a 51-year-old woman with stab wounds.
She could not be revived.
It is alleged the woman's death was the result of domestic violence.
Baleinapuka's matter will go to the Supreme Court in August for arraignment.
