The Food Court was a major target in the operation, which would appear to have taken a considerable period of time.
Equipment, including cash registers, was stolen.
Forensic police were at work at the centre early today, with many businesses having to delay opening.
The strike exposed what appears to be inadequate security at the centre, where the malls are not blocked off once the entrance doors are closed.
Chief Inspector Rick Johnson, of Sutherland Shire Police Area Command, said he was awaiting information from police on the scene.
Scentre Group, which operates the Westfield centres, has been asked for comment.
