Barry Pearson, Ashley O'Neill and Andrew Juskiw brought a Papi's burger truck to Fairy Meadow during lockdown and after a good response have entered into a partnership with a new beerhouse called Principal Brewing, soon to open at 103 Princes Hwy.
Mr Pearson said their burger business was so busy during the lockdown they put on 10 additional staff and are expecting a similar response with the Hank's Fried Chicken food van in front of the Principal Brewing site.
"By opening next week we will be able to find our feet before we get a massive influx from the new beer house."
"We are definitely hiring more staff. We put on three more last week," he said.
Hank's Fried Chicken will park in front of Principal Brewing which Steve Lozenkovski, Dave Mason and Ian Logue are opening in a couple of weeks.
"By opening next Wednesday we will be able to find our feet before we get a massive influx of people from the new beer house," Mr Pearson said.
