The representative side won the trophy in 2018, with wet weather preventing the team from defending their crown the past three years.
While the clouds lingered across the weekend, the rain held off long enough to allow Churchill to lead Illawarra to 7-270.
The batsman was the bedrock of the innings and was supported by Jono Fowles (47) and Mitchell Hearn (33).
Angus Cumming led the way with the ball as South Coast were bowled out for 99.
The bowler finished with figures of 4-13, while opener Adam Ison top-scored with 33 before he was run out.
The win came after Illawarra progressed to Sunday's final with a six-wicket victory over Highlands on Saturday.
South Coast cruised past Shoalhaven in the first semi-final.
Highlands defeated Shoalhaven in the third-place playoff.
