Three charges were laid against Wollongong Dayspots licensees accused of failing to comply with conditions of the licence under the Liquor Act.
Wollongong Dayspots operates The Grand Hotel, Harp Hotel, Mr Crown and Tusk Nightclub.
The directors of the company are Resmi Dema, Lupco Ristov and Paul Tonegato.
In Wollongong Local Court on Thursday, not guilty pleas were entered to the three charges.
It was the first time the matters were heard in court.
Documents tendered to court alleged on November 6 last year, at 7.20pm, staff failed to manage intoxicated patrons in a venue and a large affray at a venue was not record in the incident register as required.
A staff member also allegedly failed to sign on and off for their shift.
The documents did not specify which venue the alleged offences occurred in.
A hearing date of October 17 was set down and is expected to take four hours.
None of the directors were present at court and the plea was entered in their absence.
Wollongong Dayspots has been a registered business since 2010, with the current directors appointed in 2015.
