INGREDIENTS
1 cup wholemeal self-raising flour
¾ cup oat bran
cup castor sugar
½ teaspoon ground cinnamon
1 cup grated granny smith apple
1 egg white
20g polyunsaturated margarine, melted
cup buttermilk
Apple slices to garnish
METHOD
Spray muffin tins with canola spray.
Combine sifted flour, bran, sugar and cinnamon in a bowl.
Stir in grated apple, egg white, margarine and buttermilk.
Spoon mixture into muffin tin.
Bake in moderate oven (180 degrees) for approximately 25 minutes or until firm.
Makes 12 muffins. Can be prepared a day in advance. Recipe is suitable to freeze.
