Police said the man, 36, died on a rural property near Moss Vale after he suffered a fatal neck injury about 8.15am.
Paramedics were called to the Illawarra Highway property and tried to revive the man but he died at the scene.
Goulburn police duty officer Inspector Rob Post was at the scene and waiting for WorkCover inspectors to arrive.
"He has been struck in the throat by a rope that was caught in the wood chipper and that resulted in an injury that led to his death," Inspector Post said.
"It seems to be the result of a WorkCover-type incident where he has been working on a wood chipper," he said.
"We believe he was tree lopping at the time."
A WorkCover spokesman said inspectors were on their way to the property and would take over investigations from police.
"WorkCover is aware of a fatal incident that took place at around 8:30am this morning involving a wood chipper in Moss Vale, west of Wollongong," the spokesman said.
