This slice works well for a morning tea treat accompanying a nice hot cuppa, or as a decadent after dinner treat when topped with homemade dark chocolate.
It can even work well as a lunchbox treat for the kids to take to school as it does not contain any nuts, eggs, dairy or refined sugar. Happy days all round.
It is such a simple treat to make, being made of completely raw and wholesome ingredients that won't cost you the earth to acquire from your local co-op or health food store.
All you need are a few simple ingredients - a fresh banana, a variety of raw seeds, coconut oil, cinnamon and tahini. Yep, all natural products which pack a serious nutritional punch when married together in this delicious slice.
And because this is a "no-baking required" kinda slice, we are able to preserve the goodness of the nuts so we can really reap the maximum health benefits from these stellar ingredients.
Take the humble pepita (pumpkin seed) for example. Did you know the pepita seed is extremely high in protein (100 grams of pepitas contain up to 54 per cent of your daily protein needs), vitamin B complex and can even help you fight through depression due to the L-tryptophan contained within the seed, which is a secret ingredient to boost your moods? Well, now you do.
And the plain old, overlooked sunflower seed ... these little gems are an excellent source of vitamin E (antioxidant) and magnesium which can help reduce the severity of asthma, lower blood pressure and even prevent migraines.
Add to this the nutritional brilliance of chia seeds, which are loaded with a range of vitamins and minerals. They provide an excellent source of fibre, protein and antioxidants much like the other seeds and are known to be the richest plant source of omega-3 fatty acids we can consume.
Consumption of chia seeds has been linked to reduction in joint pain, weight loss and reportedly can assist to protect against serious ailments such as diabetes and heart disease.
Add them all together and what do you get: a Super Seedy Slice filled to the brim with goodness.
On the subject of seeds, it is safe to say I have fallen prey to a real "seedy" addiction. I am totally in love with seeds. I sprinkle them around any opportunity I get.
I started adding seeds initially to my breakfast to boost my omega 3, antioxidant, and protein levels at the start of the day, then I started to add them to my salads for a lively textural crunch, and then I started adding handfuls to my muffins and biscuits and even slice bases, and now I eat them as an afternoon snack combined with some nice fresh fruit or yoghurt.
What I love about them is that they are relatively cheap, compared to buying nuts, and there are so many different seed options, it is impossible to get bored with them.
So even if this seedy slice does not appeal to you, I urge you to pick up a packet of mixed seeds next time you do your shopping and start playing around with adding them to your dishes.
You won't look back, and your body will thank you for this lovely little dietary addition.
Ingredients:
- 1 ripe banana
- 2 tablespoons of coconut oil (melted)
- 4 tablespoons of tahini (either hulled or unhulled, doesn’t matter)
- 100g pumpkin seeds (pepitas)
- 100g sunflower seeds
- 2 tablespoons chia seeds (white or black)
- 4 tablespoons of white sesame seeds
- 2 teaspoons of cinnamon
- Pinch of salt
Method:
Add the banana, coconut oil, tahini, salt and cinnamon to a food processor and blend until you have a paste.
Add the remainder of your ingredients and pulse a couple of times until it is mixed to your liking. I like to keep mine a little chunky.
Pour the mixture out into a standard square slice tray and put it into the freezer for an hour, or until frozen.
If you want to add a little extra decadence for an after dinner treat, top the slice with a layer of homemade chocolate ( cup coconut oil, cup cacao powder and 1 tbsp maple syrup all melted together) prior to freezing.
Once frozen you can either cut the slice into bite-sized squares or if you’d prefer, you can even make them into raw energy bars by cutting them to the size of a muesli bar for the kids.
