What I love about this dish in particular is that the kids get free rein in putting together their own unique slider using a combination of healthy ingredients.

Ingredients:
For the patties: 500g chicken mince; 3 spring onions, finely chopped; 1 large field mushroom, finely grated; 1 large carrot, finely grated; 1 egg; 2 pieces of sourdough or 100g quinoa flakes (for gluten free option); 100g feta, crumbled; olive oil or coconut oil for frying
For the sliders: Hamburger buns (preservative free); salad of choice; mashed avocado; tomato sauce and sliced cheese to serve
Method:
Finely grate mushroom and carrot and place in a large mixing bowl. Finely chop spring onions and add to the vegies.
Add chicken mince, egg, breadcrumbs (or quinoa flakes) and crumbled feta to the mixing bowl and using your hands, squish the mixture to combine well. Shape into burger sized balls and set aside.
Add enough oil to cover the bottom of a medium size fry pan and heat on medium heat. Place burger patties into the heated fry pan and press down to flatten slightly. Pop the lid on the fry pan and cook for 5-7 minutes before flipping to cook the other side. Burger patties should be nice and golden. Cook for a further 5-7 minutes (until cooked through) on the other side.
Meanwhile, cut up tomato, cheese slices, gherkins, lettuce, avocado (mashed) and place on a platter ready for the family to assemble their own sliders.
Lay out salad, slider buns and patties on the table and let em’ at them.
