The combination of garlic and ginger add a delicious flavour and up the ante on the nutritional value of this dish.
If you want to add a little more bulk to the dish, serve it over the top of a bed of vermicelli noodles and add a sprinkle of crushed nuts or seeds.
Ingredients:
- 4 tablespoons of coconut oil (or olive oil if your prefer)
- 300grams of raw prawn meat
- 2 bunches of asparagus
- 1 bunch kale (or spinach), shredded
- 1 teaspoon salt
- 1 tablespoon ginger, minced
- 1 tablespoon garlic, minced
- 1 tablespoon soy sauce (or coconut aminos)
- Juice of 1 lemon
Method:
Heat two tablespoons of oil in a large frypan over medium heat.
Add prawns and season with 1/2 teaspoon salt,
Cook until pink and then remove and set aside.
In the same pan heat the remainder of the oil and add asparagus and kale.
Add garlic, ginger and remainder of the salt.
Cook over medium heat, stirring frequently until tender (three to four minutes).
Return prawns to the pan and add soy sauce.
Stir to combine and then divide evenly between two serving dishes.
Squeeze lemon juice over the top and enjoy.
