Emergency services were called to the crash, south of Breadalbane, about 8.10am on Friday.
A NSW Fire & Rescue spokesman told Fairfax Media multiple crews attended.
"Work is under way at the moment to remove the cheese and salvage the truck," the spokesman said.
Police said the cheese "remained contained" after the accident, but will have to be removed before the truck can be recovered.
The truck came to rest on its side, blocking all traffic on the northbound lanes.
A Transport Management Centre spokeswoman said there was "some heavy northbound traffic".
"It looks like the salvage operation might take place for some time," she said.
"Resources are on the way for the recovery."
Police said the male truck driver was not hurt.
Traffic diversions are in place around the crash site.
