A raw soup, which is completely uncooked, is extraordinarily nutritious and easy to make in your blender. It is one of the best nutritious ‘fast food’ options available to us as raw soups are not only super simple to prepare, but they are also extremely easy to digest which means we can utilise the energising foods in the soup immediately for a natural, healthful energy boost. When you enjoy vegetable based soups chilled or at room temperature you are really maximising the health benefits available from the delicious fresh ingredients as they still have all of their natural enzymes and nutrients intact. This soup is abundant in green veggies and fresh herbs which provide natural medicinal properties and also give your soup a distinct kick of flavour. Adding lemon juice to the mix adds to the alkalising property of the soup.
Another little tip when making raw soup is to use avocado or raw nuts such as almonds or cashews to achieve a smooth, thick and creamy texture without having to add dairy which can impede our digestion and slow down the availability of the nutrients into our system.
Raw Green Veggie and Herb Soup
4 servings
- 1 avocado
- 1 small zucchini, chopped
- 2 stalks celery, chopped
- 2 cups raw spinach
- 1/4 cup fresh parsley
- 1/4 cup fresh coriander
- 1/8 cup raw onion, chopped
- 1 small clove garlic
- 1/4 cup raw almonds
- 1/4 tsp Himalayan salt
- 1 & 1/2 cups water
- juice of 1 lemon
- Raw seeds or nuts for garnish
Method
Place all the ingredients in a high powered blender except the salt and process to desired consistency. Adjust seasoning with sea salt to your liking and add a squeeze of lemon juice to brighten the flavour if you wish, garnish with extra herbs, nuts or seeds and enjoy.
