Located on the corner of Crown and Keira streets, and on the ground floor of Wollongong Central shopping centre (the former Max Brenner site), The Bavarian Wollongong will accommodate 330 guests, including 100 seats outdoors.
Rockpool Dining Group is bringing The Bavarian to Wollongong.
Rockpool Dining Group CEO Thomas Pash said The Bavarian Wollongong will be open 11am until late, seven days a week.
"We're hoping to open by the end of May," he said.
"The restaurant's Bavarian heritage gives it a very distinct identity that is unlike anything else in Wollongong.

"The Bavarian is a modern, fun and family-friendly dining experience, offering an affordable and value-packed menu and arguably the best line-up of German, international and local beers in Australia.
"We're always looking for an opportunity to get dressed up and have a party - roll on Oktoberfest."
Europe will be in the heart of Wollongong, with pork knuckle, pork belly, classic sausages and schnitzels available.
Mr Pash said a personal favourite from their menu was an uber schnitzel, a chicken schnitzel topped with plenty of rocket, semi-dried tomato and parmesan.
Mr Pash said their liquor license application has been approved, "and we're really looking forward to pouring our first beers".
They will have imported beers such as Lowenbrau, Spaten and Hofbrau, served in traditional beer steins.
"Spaten is my go-to brew," Mr Pash said.
Rockpool Dining Group claims they have created 45 full-time and casual positions at The Bavarian Wollongong.
The group says they have engaged about 50 professionals and tradespeople on the project.
They say most employees will be locals, with positions to be filled including restaurant managers, chefs and casual wait-staff.
"We're currently looking for locals who have previous experience in the hospitality industry," Mr Pash said.
"It's essential for chefs to have worked in other commercial kitchens and across a range of sections, while wait-staff should display good customer service skills and understand how a front of house team works."
The Bavarian Wollongong is Rockpool Dining Group's 30th Bavarian restaurant in Australia.
Last November, the chain opened its 26th restaurant (seating 550 guests) at Stockland Shellharbour, in The Avenue dining precinct.
