The Superoos prevailed 20-10 after Brock Skelly and Ben Barnard crashed over while Sharks forward Jack Kavanagh was sin-binned in the second half.
The results means Shellharbour face replay of last year's grand final against Kiama, who also lost the big one against Jamberoo the previous season.
Coach Jono Dallas said the Roos reaction after fulltiime reflected there was still business to be done.
"It's awesome you know, making a grand final, but I said to the lads (in the sheds), the most pleasing thing is a bit of an obscure one," Dallas said.
"I was watching the (lower grade) teams and when they won, they're jumping around a big, but when the hooter went, the boys just sort of shook hands.
"Which just makes me think that the mindset is right, we've got to win it, we don't really get prizes for making it.
"Until we get back together on Tuesday, we'll definitely enjoy the occasion. Especially to beat them here at Shellharbour, I'm pretty proud of them."
The Knights held off Gerringong in a thriller 16-12 on Saturday, meaning the Lions crash out in straight sets after going down 30-22 to Jamberoo last weekend.
Kiama had opened the finals series with a 38-6 thumping of Warilla.
The Sharks now meet the Knights at Cec Glenholmes Oval on Sunday afternoon.
