NSW reached 2-66 at tea on on Saturday's second day to trail by 365 runs after Victoria had declared just before lunch on 7-431.
Tea was taken a few minutes early with a few drops of rain falling at the SCG.
The bottom-placed Vics have yet to register a win in six rounds, while NSW have collected five wins and a draw.
The home side remained watchful throughout the session, scoring at just 2.5 runs an over.
The Blues' opening pair put on a half-century stand before Nick Larkin was trapped in front for 21 with the score on 51.
The reliable Daniel Hughes soon followed, bowled by Will Sutherland for 31.
A maiden first-class ton from Victorian wicketkeeper Seb Gotch highlighted the opening session on day two with the 26-year-old remaining unbeaten on 100 when the declaration came.
Gotch posted the landmark off 241 balls, finding the boundary nine times in a largely cautious knock.
Opener Travis Dean was the other main contributor, posting 71 off 171 deliveries, having returned to the crease in the evening session on day one after a blow to the groin in the opening hour of play.
