The Wollongong local government area has 307 of the new infections, while there are 100 new cases from Shellharbour, 26 from Kiama, and 92 from Shoalhaven.
NSW hit another record new case tally, with 23,131 infections detected in the 24 hours to 8pm Monday.
The number of hospitalisations in the state has reached 1344, with 105 people in intensive care, of whom 27 need ventilation.
There are 23 people in hospital in the Illawarra Shoalhaven LHD because of COVID.
Two more people have died, a man in his 90s and a man in his 70s, both of whom had received two doses of the vaccine.
There were 83,376 COVID tests reported on Monday.
As of Sunday, 93.6 per cent of people aged 16 and over were fully vaccinated and 95 per cent had received at least one dose.
Over 81 per cent of 12 to 15-year-olds have had at least one shot, while 78.1 per cent have had two.
People aged 18 and over can now receive their booster shot four months after their second dose.
The vaccination program for children aged five to 11 will begin on Monday, January 10.
