Following consultation with NSW Health, organisers Mark and Kerry Bright have decided to cancel the 2020 event, which was due to take place in November.
However, ticket-holders appear unable to claim a refund at this time.
Organisers say all tickets that have already been purchased for the 2020 event will be re-issued in the coming weeks with the new dates for the 2021 event.
"Due to our current financial position refunds will not be available at this time," the organisers posted on Facebook.
Originally set for May 2020 at Shellharbour Airport, Wings Over Illawarra was postponed to November in the hope the current COVID-19 situation would have eased sufficiently for the event to take place.
"With the postponement from May to November, it was hoped that the health risk of the coronavirus pandemic would have eased sufficiently for Wings Over Illawarra 2020 to proceed," Mr Bright, the event director, said.
"Many months of planning go into an event such as this, and in 2020 we have had to plan twice to consider the extra infrastructure that we believed would be necessary for the November event.
"After lengthy discussions with NSW Health, it became apparent that we would be unable to safely proceed with the event in 2020."
Mr Bright said they are now forging ahead with Wings Over Illawarra 2021, and have set the dates for the November 13 and 14, 2021.
"Having the event in May 2021 was considered, but we did not want to find ourselves in the same situation again with the pandemic not completely under control," he said.
