Grassy Knoll brewery, working out of Bulli Brewing at Unanderra, has teamed up with industry body Avocados Australia to brew the limited-release Aussie Avo cream ale.
Brewer Jeff Argent was in two minds when they asked him to make the beer.
"I definitely had reservations," he said
"At first I thought 'wow is that even possible?' but at the same time I thought it would be a fun beer to make. There was just a bit of research and a few calls around to talk to people who had experience of it before. It turned out it wasn't as daunting as I first thought."
But it was messy, Argent had to de-seed around 40 avocados, and then put the flesh into a kitchen blender before climbing a ladder to pour it into the fermenter.
"It's based on the trend now with oat cream beers, we took out the oat part and added in the avos."
Locally, the beer is only available at the Grassy Knoll cellar door and on tap at Papi Dulce at Thirroul.
