Jahnessa Evelyn Sheree Jerome, 28, has been in custody since her arrest in October and applied to be released during her appearance in Wollongong Local Court on Wednesday.
In a document tendered to court, police allege Jerome was watching television with her boyfriend on October 6 last year before she picked up a metal bar and struck the screen.
Only moments later, police allege Jerome picked up a bone-handled knife, walked up to her boyfriend and stabbed him in the upper leg, causing him immediate pain and bleeding, while he was sitting in a chair.
The man made his way outside of the unit, located on Johanson Crescent, and spotted a neighbour nearby and allegedly called out to him saying his girlfriend had stabbed him in the leg.
The neighbour went to get first aid supplies from his home.
Upon walking back inside, the partner waited near the door before Jerome walked up behind him and allegedly, without warning, stabbed the man another two times in the arm, with the second blow plunging into his ribcage, puncturing his lungs.
Upon his arrived to the unit block, the neighbour was allegedly told "she stabbed me again" before he helped the boyfriend down the stairs and applied pressure to the wounds, while another neighbour called Triple 0.
Paramedics arrived a short time later before the man was taken to Wollongong Hospital for treatment.
When police arrived, Jerome allegedly armed herself with a metal pole and knife.
Jerome allegedly went onto the balcony as police officer kept their distance.
After a short standoff and negotiations, Jerome agreed to surrender and was arrested before being taken to Wollongong police station where she was charged.
Police allege the woman was under the influence of illegal drugs at the time and while in custody was volatile, unpredictable and could not answer simple questions.
Jerome was charged with two counts of wounding a person with the intent to cause grievous bodily harm and contravening a restriction in an apprehended domestic violence order.
In court on Wednesday, Magistrate Claire Girotto refused to grant Jerome bail noting the seriousness of the allegations and her criminal history which included escaping custody.
