Uncle Bok’s is the second venture for Moominn owners Barbora Sterbova and Arron Choi.
Uncle Bok’s is a fictional character created by Mr Choi with the Bok being slight play on his last name. Moominn was a nickname given to Ms Sterbova as a child.
While the couple will own and run both businesses they will each focus a little bit more on the one that relates more to them.
“Based on the mysterious Uncle Bok, the bar and restaurant will have a focus on European beer, wine and cocktails which will be matched to European and Asian inspired dishes,” Ms Sterbova said.
Uncle Bok’s, located at Shop 1/48-50 Crown Street (near South Coast BMW), will have an olden-style Victorian feel.
Ms Sterbova and Mr Choi met when they were studying commerce at the University of Wollongong.
They went on to work in corporate roles in Sydney before deciding to return and open Moominn in mid-2017.
Mr Choi worked in human resources and Ms Sterbova in market research but they longed to get creative with their own business.
They each had previous experience working in hospitality.
“But we always wanted to be something that is a bit different. We wanted to create something cosy where people can just come chill and relax,” Ms Sterbova said.
Uncle Bok’s is a little larger than Moominn and likely to include live music. “And it will have some European tap beers,” Mr Choi said.
Moominn has a chilled vibe and a casual combination of Asian and Czech food and Uncle Bok’s will have a more European and Asian influenced menu.
“We are going for delicious affordable food. It will still be a casual dining experience,” Ms Sterbova said.
Moominn presently opens from 5pm to midnight Tuesday to Saturday but is looking to open for lunch as well next week. Uncle Bok’s will be a night venue operating similar hours to what Moominn is now.
An addition five or six jobs will be created with the new restaurant and bar.
