The Canaries finished the regular season in fourth place, before they upset Wests in the semi-final.
They took on second-placed Kiama in the final, a five-wicket haul from Cooper Jensen helping restrict the Cavaliers to 7-146.
Jack Yates then scored an unbeaten 52 to lead Dapto to a five-wicket victory.
The win came as a number of teams found form at the right time of the season.
Second-placed Wests backed up their major semi-final victory over Keira Black to defeat the Lions in the Under 13A decider. Thomas King top scored with 36 for the Devils.
Northern Districts Sky also secured a title from second on the ladder, the Butchers beating Helensburgh in the under 13B grand final.
Kiama took out the under 17 trophy, Jack Sweet and Troy Sweet both scoring half centuries in the win over Keira.
