Police discovered the doll - and the horrific footage - inside Robert Garcia's Warilla home in November last year while carrying out a house call amid concerns for his welfare.
Police said the doll was found in Garcia's bedroom wearing a pink top, no underwear and its blonde hair had been styled into pigtails.
They said a hole had been cut out in the doll's crotch area and a crude synthetic tube had been inserted into the hole to allow for penile penetration.
The possession of a child-like sex doll is illegal in Australia and carries a maximum prison term of 15 years.
Court documents reveal Garcia, aged 52, is well known to police for calling to emergency services when he is intoxicated, then refusing assistance.
On the morning of November 5, Garcia made a call to the Police Assistance Line but when questioned, told the operator it was "too late" to help him and he hung up.
General duties officers from Lake Illawarra Police Station were subsequently sent to Garcia's home to carry out a welfare check.
They found the unit empty on arrival. Police started searching the house, at which time they discovered the sex doll in one of the bedrooms.
They also unearthed child abuse material on a mobile phone found inside another room in the house, as well as two videos of Garcia having sex with the doll.
In one video, the doll is seen wearing a pair of children's underwear. The same underwear was found in Garcia's bedroom and appeared to have been soiled.
Detectives were called to the house and a crime scene was established.
Meanwhile, Garcia arrived home mid-way through the police operation.
He initially gave officers a fake name but was quickly recognised by those who knew him.
He told police he'd gone to see a doctor and had a referral to go the the hospital for a mental health assessment but had chosen to buy beer and come home and drink it instead.
When asked about the child abuse material found on his phone, Garcia claimed he was "an artist" and there was "nothing wrong" with the pictures.
He also admitted to owning the doll and that he'd used it for sex.
Police said Garcia kept telling them he was normal and there was "nothing wrong with him" during their interaction with him.
A subsequent forensic analysis of three phones confiscated from Garcia's house revealed there were more than 10,000 images in total, the majority of which were classified as child abuse material.
Garcia was arrested and charged with one count each of possessing a child-like sex doll and producing and possessing child abuse material.
Garcia pleaded guilty to all three charges in court recently.
He remains on bail ahead of his sentencing in Wollongong District Court in July.
