The Bavarian's food and beverage director John Sullivan will be on hand for the 4pm opening and said the venue will be similar to before it was closed during COVID-19 but some improvements had been made.
"We've given the venue a little TLC, a big clean and refreshed some paintwork. Other than that, it's looking great and customers will see all the familiar Bavarian décor and finishes."
Mr Sullivan said the site currently employed 15 staff members and the business was employing more.
"We are still looking for a final few back of house and front of house team members," he said.
"The Bavarian Wollongong has a loyal following and we've been fielding lots of questions on social media about when we are reopening. Some of our original regulars have already booked in.
"During the closure, I think a lot of locals realised how much they have missed us and are keen to come back. The Bavarian is a one-of-a-kind experience.
"Pork knuckles, pork belly and schnitzels are among our best sellers, along with steins of beer. And we're sure the local community will love our new winter platters."
The Bavarian Shellharbour is also open Tuesday to Sunday from noon to late.
