Mark Bruton stands accused of taking a cheap shot at the officer during the bizarre incident, which began when Bruton walked into the foyer of Wollongong Police Station just before 9.30pm and started yelling abuse at police.
Court documents said Bruton, who is well known to officers and has multiple convictions for assaulting police on his criminal record, refused to leave the station when asked, prompting police to take hold of him and carry him outside to a nearby bench.
Despite the repeated abuse, police initially took pity on Bruton and decided to take him to his room at the Piccadilly Motel.
However, he allegedly stretched out his arms and legs to prevent being loaded into the back of a police vehicle and when pressed, allegedly lashed out at the sergeant, kicking him in the groin area.
Police claimed they tried to reason with Bruton, however he kept up his assault attempts, allegedly throwing his head forward in a bid to strike them.
Court documents said the sergeant was forced to use several police-approved defensive strikes to avoid being injured any further.
Bruton was eventually placed inside the vehicle and driven around to the custody room, where he was charged with police assault.
While his paper work was being processed, Bruton allegedly pulled his pants down in the dock and threatened to urinate.
He was allowed to go to the toilet however only got part-way there when he threw himself on the ground, at which time a cat's eye marble fell out of his anus, police said.
Meanwhile, paramedics were called to treat him for a bloody nose.
It is alleged he continually wiped his nose on his hands and smeared his blood all over the walls of the police dock, before urinating on the floor.
Police claim Bruton did "the same thing last time" he was in custody.
Officers added a property damage charge to his list of offences.
Bruton fronted Wollongong court on Sunday seeking release on bail, however Registrar Peter West refused the application on account of Bruton's prior criminal history and his poor record for attending court.
