Police subsequently issued Cooney with a future court attendance notice in July this year for charges of assault occasioning actual bodily harm and affray.
"It's alleged the man, who was working at the premises at the time of the incident, headbutted and punched a member of the public following a verbal altercation," police said.
Cooney is already on bail over unrelated domestic violence charges amid allegations he savagely attacking his ex-partner in January this year after discovering text messages from another male on her mobile phone.
The fresh charges were briefly mentioned at Wollongong Local Court on Tuesday morning, however Cooney was not required to attend in person, having already had his original bail altered to allow him to attend a rehabilitation centre in Queensland.
Cooney's lawyer entered a plea of not guilty on his client's behalf and had the case adjourned to next month for police to begin serving their brief of evidence.
