The one-year deal comes after St George Illawarra told the 25-year-old he would not be offered a new contract for 2022.
Dufty received limited interest from other NRL clubs, the fullback touring the Raiders facilities before they ceased their pursuit.
A move to the English Super League was considered a last resort, with the explosive attacker eager to remain in Australia.
The Bulldogs jumped into the mix and Dufty will join a backline that is set to feature new recruits Matt Burton, Josh Addo-Carr and Brent Naden.
There had been discussions between the two clubs of a player swap between Dufty and Will Hopoate, however that is now off the table.
While Dufty has had issues with his defence, he has been a standout in attack and it's this potency Canterbury are eager to unleash.
"Everyone knows what an exciting player Matt Dufty is and his record of scoring 44 tries in 79 matches is testimony to the attacking flair that he brings," Bulldogs chief executive Aaron Warburton said.
"He is quick and elusive with valuable NRL experience, and we believe that he will be an outstanding complement to our backline for next season.
"We are continuing to create the squad that we believe can be successful for next season and beyond, and Matt will be someone who I am sure our fans will be excited to watch run out in the blue and white next year."
