Kalisha Lee Buchanan, 34, was charged with wounding a person intending to cause grievous bodily harm and reckless wounding before she appeared in Wollongong Local Court on Wednesday.
Documents tendered to court said Buchanan occasionally lives with a 69-year-old man in a Warrawong unit and are in a relationship.
The pair began quarreling about 9.30pm on Tuesday, the documents said.
Police allege Buchanan was demanding the man give her money and drugs before the argument turned physical.
Buchanan allegedly picked up a knife and stabbed the man, causing two lacerations to his chest.
The man called Triple 0, allegedly telling operators he had been stabbed in the chest at home and that Buchanan was still inside the Todd Street unit.
Police and paramedics arrived a short time later, finding the man bleeding heavily and a saw a large amount of blood splatter and pooling throughout the main living area and walkways.
Smashed glass fragments were also strewn throughout.
Paramedics treated the man at the home before he was airlifted to St George Hospital in a serious condition.
Police established a crime scene and spoke to two witnesses who allegedly told police they heard Buchanan arguing with the man shortly before the incident and then saw her running away.
Officers found Buchanan nearby the unit a short time later with blood splatter on her clothing, hands and face.
She was arrested and taken to Lake Illawarra Police Station and charged.
In court on Wednesday, police prosecutor Ashlea Jacob opposed Buchanan's release noting her lengthy criminal history of violence, including being charged six times over the past five months for similar incidents.
She said the prosecution case appeared strong and Buchanan had allegedly made some admissions to police.
Defence lawyer Laura Fennell said Buchanan, if released, would visit the Homeless Hub to find a residence but she did not have another home as she was living with the alleged victim.
Ms Fennell also said Buchanan, who moved to Wollongong from Ballina in 2018, alleged the man had punched her in the face and split her lip prior to the incident but she understood the seriousness of the charges.
Registrar Tina McKenna refused to grant Buchanan bail and the case was adjourned to January 10.
