The family-friendly program will include motorcycle stunts, a jet truck, a fireworks and laser light show, plus other "extreme" feats.
Showground manager Darren Hull has high hopes the trucks will be the "catalyst" for major bookings to start rolling in again, with the aim to have a different event on each week.
"Once they see that up and running I think the phone will go crazy," Mr Hull told the Mercury.
"I'm hoping to get the crystal festival, the camel festival and all those people who had to cancel because of COVID, I want them back in the next six months. The plan is to have them every weekend."
Annual events already cemented into Bulli Showground's calendar include the artisan markets, the Illawarra Festival of Wood and the AMCA Antique Motorcycle Weekend in August.
The annual Illawarra Folk Festival is also part of their annual offering, though the pandemic has again forced the cancellation of the 2022 event.
"We're just keen to get things happening again," Mr Hull said.
The showgrounds have recently undergone around $500,000 in upgrades thanks to state government grants including a new fence around the outside of the ground, new power distribution boxes (so generators aren't needed to be brought in) and a new electronic sign that can be seen from the Princes Highway.
